That's a good question, actually. I guess to differentiate them from humans, make them look more animalistic. It's been a while since I read Anne Rice's vampire books, but I kind of remember her vamps having a specific quality to their eyes too, though maybe not golden. The vamps in Buffy, when they 'vamped out' had golden or yellow eyes as well.
Oh this looks good, like a "1984" version with vampires and humans. I guess the eye things have something to do with their animal side and their improved night vision.
